What do sampling rates have to do with audio reciever performance?

My audio receiver (Pioneer HTS-GS1) supports 96.0 KHz sampling rate (according to my computers sound tests), and I noticed that some higher end receivers advertise "192kHz/24-bit digital-to-og converters." What does this mean in terms of performance and audio quality if I'm watching HD movies or playing music from computer?
